We were having some guests on Sunday, and I did what I do best - bake.
We had some browning bananas in the fruit bowl, waste not want not - banana muffins!! And according to those who tried them they were epic!
- 275g self raising.
- 1 tsp bicarbonate of soda.
- 1/2 salt. 3 bananas (I used 4!)
- 125g caster sugar.
- 1 egg.
- 50ml milk.
- 75g butter melted.
- Then 12 squares of chocolate. I used dark chocolate, but any would work i'm sure.
- Chopped nuts. I used Brazil nuts but any would work. Whatever you fancy. Nut bananas and chocolate combo is always a good one.
Preheat oven to 180c. Line a muffin tin.
Sift the flour, bicarbonate and salt together.
In another bowl mash bananas then add all other ingredients (except the chocolate and nuts) once combined. Add to flour and mix well.
Then add the batter to the cases, add about a table spoon of batter - to cover the bottom 1/3 of the cases. Then pop the 12 squares of chocolate one in each case. Cover with more batter.
Sprinkle with Brazil nuts and cinnamon.
Bake for 20 mins. or until cooked!!
Once baked the sponge is well risen, with a melting chocolate middle when eaten warm!
